These energy bites are the perfect healthy snack after a long day of school. My girls love to help make them too!
- 2 cups Quick Oats
- 1 cup Peanut Butter
- 2/3 cup honey
- 2 tsp vanilla
- 1 cup chocolate chips
Mix oats, peanut butter, chocolate chips, honey, and vanilla together in a medium sized bowl. Cover and chill for 30 minutes.
Roll into 1 inch balls (I like to use the Pampered Chef cookie scoop)
Keep in an airtight container and refrigerate. We eat ours fast, but they are good for up to 1 week. This recipe makes 24 balls.
